Hot on the heels of these achievements, Fairmont Resort Blue Mountains is looking to shine brighter in 2015 with a number of exciting changes to come:

New additions and refurbishment

new food and beverage outlet, The Terrace, will be completed late November 2014, as refurbished from the existing terrace space through Jamison’s Restaurant. Guests will be able to enjoy delicious casual dining in comfort, increasing the number of seats set against the magnificent backdrop of the luscious Jamison Valley. The menu will reflect the tastes and flavours of the local region, as designed by recently-appointed Executive Chef John Slaughter.

John has been hard at work since he joined the team in August this year, injecting his own style of creativity with local produce. Arelaunch of all the food and beverage outlets to reflect his new culinary direction will be completed in December 2014, including a brand new tapas menu in Embers Dining.

The fantastic dining experiences to be had in Fairmont Resort Blue Mountains can only be made better with luxurious stays. 17 new accommodation rooms are currently in the works with a completion date targeted in Autumn 2015. Consisting mainly of one bedroom suites and deluxe rooms, these new additions will delight guests who are looking for memorable stays whenever they visit the hotel and the Blue Mountains.

With dining and accommodation covered, an added luxurious experience will come in the form of a new 12 treatment room day spa also looking to be completed in Autumn 2015. The brand new day spa will offer an array of health programs with couples rooms and a relaxation space among its features.

Nestled in the lush Jamison Valley of the Blue Mountains, Fairmont Resort Blue Mountains will be the place to be in 2015 for the ultimate getaway experience.
