Homage Restaurant Queensland's Newest Dining Destination at Spicers Hidden Vale

Spicers Retreats is proud to announce the launch of Homage Restaurant at Spicers Hidden Vale.

Headed up by one of Australia's best Regional Chefs, Ash Martin, who has previously been awarded hats by both the Queensland and Australian Good Food Guides, Homage is set to become Australia's premier regional dining experience. As the name suggests, Ash and his teams expertly crafted dishes pay homage to the land, the produce and local farmers.



Menus are inspired by the best local produce from the Lockyer Valley Region – from independent suppliers, farmers markets and from the 12,000 acre Hidden Vale property itself, which yields wild bush lemons, mangos, lilly-pillies and grass fed beef. Further adding to its bounty is Homage's newly established market garden, spanning over 80 garden beds growing everything from radishes and pumpkin, to tomatoes and strawberries. Next to the garden is the newly planted orchard growing over 30 citrus, olive and avocado trees and a bee hive for helping pollinate the garden which yields over 80kg of honey per year. A smokehouse is also being built alongside a shade house for supplying leafy herbs throughout the year.

Ash's food style is an artful balance between highlighting each unique ingredient, seamlessly integrating local produce and sophisticated cooking techniques which draw on the flavours of modern French cuisine. The menu changes regularly as it is dependent on what is harvested each day, both at the Hidden Vale property and in the huge Lockyer Valley “Veggie Patch".

Ash comments “The importance placed on the people behind the produce is a huge part of what makes Homage such a unique culinary destination. The Homage team are committed to supporting local famers – both big and small – who use humane and organic processes. The colourful stories behind each dish bring another element to the dining experience – we are really trying to incorporate the whole produce story at Homage, from the farm to the fork”.

The launch of Homage is the first stage in the redevelopment of the historic Hidden Vale property which is due to be completed in mid-2015.
